03. What are some alternatives to Wheat products?

You may not be ready to give up those simple carbs just yet. I understand. 

Here are some carb sources that are OK on a gluten-free diet:

Rice
Potatoes - white, sweet
Corn Tortillas - anything with Masa
Yams
Tapioca Products
Beans
Oats, Oatmeal - processed on gluten free equipment (check the label)
Noodles made from mung beans or yam flour (Asian supermarkets have these)

There should also be gluten-free breads, pasta, and crackers in the natural foods section of your supermarket.
