Here are some carb sources that are OK on a gluten-free diet:
Potatoes - white, sweet
Corn Tortillas - anything with Masa
Oats, Oatmeal - processed on gluten free equipment (check the label)
Noodles made from mung beans or yam flour (Asian supermarkets have these)
There should also be gluten-free breads, pasta, and crackers in the natural foods section of your supermarket.
